ERP for central kitchens and suppliers

When a central kitchen supplies dozens of stores, franchisees and B2B customers, it needs to be managed like a plant: production planning, cost per batch, traceability and its own P&L.

The central kitchen is a profit center: production cost, transfer prices and P&L measured on their own.
The central kitchen challenge

The central kitchen, a cost blind spot

Many ingredients go in and products go out to many places, yet the kitchen’s cost and performance are rarely measured on their own.

01

Demand from many channels

Owned stores, franchisees and B2B customers order on different schedules and prices.

02

Production planning

Daily orders must become production orders and ingredient purchase plans.

03

Production cost

Ingredients, labor and overhead need allocating to each finished batch.

04

Transfer pricing

Prices charged to stores in another entity affect both companies’ P&L.

05

Lots, expiry, traceability

Finished goods need lot and expiry records traceable to input ingredients.

06

Daily deliveries

Issues, transfers and store receipts must match at both ends.

WMS Mobile

ERP in the hands of stores and kitchens

Most F&B chain leakage happens in storerooms, kitchens and stores, where staff do not sit at a computer. The Acumatica WMS mobile app takes inventory work to where it happens: scan barcodes with a phone or handheld scanner, and data reaches the ERP in real time, tied to the person and the moment.

  1. Receiving at the storeScan barcodes against the purchase order and check quantities and units as goods arrive.
  2. Central kitchen to store transfersTransfers are done on mobile; when the kitchen and store are separate entities, the intercompany transaction is recorded automatically.
  3. Issues to the kitchenRecord ingredients issued to the kitchen at the storeroom, with food cost posted to the right store.
  4. End-of-day countsCount by ingredient group with multi-unit barcodes: case, pack, bottle, can.
  5. Stock lookupCheck stock by warehouse and location on the phone, without calling head office.

The leadership viewWhen storekeepers, head chefs and store managers each have their own account, every transaction is recorded by the person who performs it. That is the foundation of internal control, and Acumatica licensing does not limit the number of users. One system for the organization →

FAQ

Frequently asked questions

Should the central kitchen be a branch or a separate entity?
Both are supported. If the kitchen is a separate entity, deliveries to stores owned by another company create intercompany transactions automatically, and consolidation eliminates them.
How is central kitchen production cost calculated?
Production orders record actual ingredients issued against the BOM, labor and allocated overhead, giving the cost of each finished batch.
Can we sell to B2B customers in the same system?
Yes. The central kitchen can sell to franchisees and B2B customers through sales orders, with price lists, credit limits and receivables per customer.
How is this different from the Central kitchen & MRP page?
The function page covers production and MRP capabilities. This page covers the business model where the central kitchen operates as a supply company for the whole chain.
